A word from the chef (Sam!)

I adore food. In my eyes, food has the potential to be the highlight of every day life. It is not merely fuel but something to look forward to, something to get excited about. Many people I know are attracted to the cook books titled “15 Minute Meals” or “Easy Midweek Suppers”, but to me the time taken to cook up a storm is as much fun as the tasting itself.

And to make food even better, cook it over fire! Wood, charcoal, hot stones, salt blocks - whatever it may be, in my opinion there is no food’s flavour that is not improved by cooking it with fire, smoke and a bit of salt. The style is primal, it is archaic and most importantly of all, it is simple. Using such an elemental method to make delicious food is something I simply find fun: messing about with meat, fish and vegetables outside in all weather breaks the shackles of laborious kitchen cooking - and it also looks flipping cool too.
